Bacon-Wrapped Stuffed Chicken Breast

Ingredients:

1 lb or 4-6 boneless skinless chicken breasts

1 package of cream cheese.

¼ cup of shredded Monterrey & mild cheddar cheese.

2 tbsps Hidden Valley Ranch seasoning

1 tsp of crushed red pepper (optional)

1 package of bacon.


Directions :

In a bowl, mix the softened cream cheese, shredded cheese, Hidden Valley ranch seasoning and crushed red pepper.


Pound the breast so it’s about ¼ inch thick. Season chicken with desired seasoning but I used McCormick Montreal Chicken seasoning.


Divide the cream cheese mixture evenly and place it in the middle of each piece of chicken. Roll the chicken breast up starting at the long side trying to keep the filling inside.


Wrap 1 or 2 slices of bacon around the chicken.


Arrange the rolls on a baking sheet or in a glass casserole dish and bake in a preheated oven to 375° for 30-35 minutes (until internal temperature is 165°F).


Once cooked, broil for 5 minutes to brown and crisp the bacon and turn the rolls to broil the other side for 3 minutes too.
