Easter was my favorite holiday as a kid. Easter was the one time of year that I could get my hair straightened. Also, every Easter when I was growing up, my mom would make a bunny cake to celebrate the holiday. As a kid, that bunny cake seemed like the coolest thing ever. So colorful and elaborate! Little did I know, all it took was two 8-inch-round cake pans, a knife, and some frosting. There are a few types of bunny cakes—but this year I decided to make one like my mom used to make.
Here, is a step-by-step guide on how to make your own this Easter.
You will need:
-Two 8-inch-round cakes (cooled)
My family loves red-velvet so I used my mom’s recipe or you can use a box cake
-3 cups of cream cheese frosting (also my mom’s recipe) or white frosting
-1 bag of jelly beans & 1 bag of Twizzlers pull-n-peel for decorating
1. Put one cake on a work surface. Using a knife, cut the cake to form 1 bow tie and 2 almond-shaped ears. (See below.)
2. Place the uncut cake in the center large rectangle platter or an inverted baking sheet. Arrange the 2 ears above the cake on the baking sheet and the bow tie directly below. (See below.)
3. Using a spatula, frost the entire cake with the cream cheese frosting. (See below.)
4. Decorate the bunny with jelly beans, twizzlers or you can use M&M’s and skittles. And there you have it! The cutest Easter bunny cake ever.
